What Is Gluten & Celiac Disease?
Gluten is an all-encompassing phrase which refers to the proteins found in wheat products. Wheat-based foods include rye, barley, farro, and triticale and the gluten acts as a binder for many foods and dishes. A small percentage of the global population has an auto-immune reaction when ingesting or coming into contact with gluten, this is called Celiac Disease.
While those with Celiac Disease cannot consume gluten-based foods, there are alternatives, such as corn, rice, quinoa and buckwheat or millet. Gluten is also not found in fruits, vegetables and oils -- and many of our dishes are gluten free because of these alternatives.
