Easy To-Go Lunches

Let’s face it, with constant appointments, over-scheduling, and deadlines-life gets overwhelming. Unfortunately, not everyone has the time to spare in the kitchen and we find ourselves pulling in the drive through of our local fast food joint for lunch all the too often.

This kind of lifestyle not only becomes costly, but it eventually catches up to us health wise as well.

So how can we better manage our time preparing meals in the afternoon, while also considering our health?

 

Healthy doesn’t always mean difficult

 

It is a major misconception to think that healthy recipes entail massive amounts of work. They don’t have to be as time consuming as they’re made out to be, either. Organization is key when it comes to time-management, and this is where weekly meal prep comes in handy.

At the beginning of the week, try jotting down your daily meals for each day. Gather the list of all of your ingredients, and take a trip to the grocery-store.

In this blog, you’re going to learn some mouth-watering tricks and tips that are so quick and easy, you might even be able to fit in an afternoon nap! (hey-we didn’t say you couldn’t dream!)

 

Cashew nut chicken and rice bowls

 

One excellent recipe to make for lunch this week are these delicious cashew chicken and rice bowls! You can make these the Sunday before the week starts, how easy is that?

 

Ingredients

  • 2 tablespoons peanut oil/olive oil

  • 5 chicken breasts

  • 6 ounces raw cashew nuts

  • 5 tablespoons fish sauce

  • 5 table spoons soy sauce

  • 1 bunch green onion, chopped

  • 1 bell pepper, chopped

  • 2 cups rice

 

Directions

  1. Cook rice according to package directions

  2. While cooking the rice, cut chicken into pieces. In a large cast-iron wok or skillet, cook the chicken in peanut/olive oil until chicken is cooked through. Add soy sauce. Add bell peppers and onion.

  3. When sauces are almost cooked through, add cashews.

  4. Place food in desired number of containers.

 

Tasty vegetable soup

 

You really can’t go wrong with this classic vegetable soup. Remember you can add or take away anything from this recipe (including meat!)

 

Ingredients

  • 2 tablespoons olive oil

  • 1 garlic clove, minced

  • 1 cup onion

  • 1 cup carrots, chopped

  • 2 cloves garlic, minced

  • 3 cups chicken broth

Directions

  1. Heat olive oil in a large pot. Cook your garlic, onion, carrots, and potatoes.

  2. Pour in broth and add seasonings.

  3. Bring to a boil, then reduce heat to simmer. Cook for 25 minutes.
